I would suggest the Pinnacle Vista MCE remote.
I bought it off of Woot for $25.
There are XP drivers, and if you use Vista, it's plug and play, no drivers.
The IR side will read ANY code you give it, so if you want to change remotes, either tell the remote to be an MCE IR6 remote, or just update the receiver codes.
That is easy if you are using IR Commander (Sorry Melloware)
You just update the XBMC xml file.

I am a little confused at the difference between the Microsoft and the Pinnacle version of the remote. Do they both work for XBMC out of the box or does anything extra need to be done with one or both of them.
Also seems like this remote is at a very few vendors online and goes around $30 (shipped). Is that about the average price or does it go on sale at lower price (~20) from time to time.

You are most likely going to have to buy online, but $30 is about what you are going to pay for a remote. All MCE remotes are the same, less if it is for XP MCE or Vista. You want a Vista Remote, better driver support.
Now there are cheaper remotes, but a large part of what you are paying for is the IR Receiver/Blaster. So do yourself a favor, and get one with a good IR Receiver. The Pinnacle IR Receiver/Blaster has a 6' USB cable (I think) but since the cable is not integrated, you can buy a longer one off of monoprice if you need to.

I got the sony PCVA-IR8U IR receiver with a sony MCE remote (RM-MC10) a while back off ebay. I use my URC remote instead of the sony. You can sometimes find a random auction for the receiver/remote on ebay for a deal since its not as common as the microsoft combo.

You would need to find a driver for it.
To XBMC the remote is just activating commands just as you would if you pressed buttons.
But if you have a Mac, wouldn't you use the Front Row remote?
If you are running Mac, you should talk to guys in XBMC for Mac.
They would know better.
