While using my component cables I accidentally switched my resolution to 420p.
My tv won't display it and now I can't seem to switch it back.
It boots into 420p if I put in a game, or if i go to the dashboard. I can still ftp to it.
It is softmodded and has unleashx.
I can boot with the regular cable, but the options are disabled.

You either mean 480i, 480p, or 720p, but in any case can you explain exactly what you have done, where, how, and when?, and please (always) post a debug log.
???

lol...yeah 480p. Didn't realize I put that.
I changed it in XBMC.
I changed enable 480p - > Yes.
I may have also changed enable 720p. I can't remember.

How do I make a debug log?

Enable debug logging under settings then you will find in in the XBMC application folder.

Note that you will still have to better describe how you got to where you are now.
Also, what formats does your TV support exactly? Post make/manufacturer and model.

Do you have a friend with a TV that does support this mode?
Go over for a beer and switch it back?

Or try using the original standard cable, it should boot normally then i think.

The original cable works, but doesn't enable me to change it.
The way I originally changed it was I booted into the dashboard (not sure how to correctly refer to it)
I went to Applications -> XBMC
Once XBMC was loaded I went to System -> System -> Video Hardware and selected Enable 480p.
My debug log when using the Component Cables:

Ok don't know if this will work, and i'm sure there is a better/easier way.
But i have used avalaunch before, i used it to activate NTSC so i could go HD, it had alot of options for modes and stuff, i think that will work, but i wouldn't guaruntee it.
Although ignore that if you have a softmod, it messes with your eeprom (or something!) and i don't know if it might mess up a softmod or not.

My tv is an RCA 27F400T. 4:3 NTSC.

It is softmodded and has unleashx.Maybe you have a "Virtual EEPROM", if so then please try disabling it.
http://xbmc.org/wiki/?title=HOW-TO_enable_HD_(High-Definition)_on_a_softmodded_European_PAL_XboxCreat e a blank text file on your computer and rename it "EEPROM_off.bin" without the quotes - make sure that is the whole name, Windows sometimes hides the last extension and EEPROM_off.bin.txt is no good to us.
Copy the "EEPROM_off.bin" file into the root of E. What this does is disable the "virtual EEPROM" which prevents the switching of video mode in the next step.

Not sure if I'm missing something here but surely you can just FTP to your xbox when its running with the standard cable and just copy the guisettings.xml out of the userdata directory to your PC, change the videoscreen setting to 4 (assuming ID 4 in your XML file relates to NTSC 4:3) and then FTP is back?
<videoscreen>
<guicalibration />
<resolution>4</resolution>
<testpattern />
<testresolution />
<vsync>2</vsync>
</videoscreen>
